  1. First cut the brinjal into circle shape (not very thin slices).take 1 tsp turmeric powder and apply on brinjal pieces. Then in a pan heat 2 tbsp oil and stir fry the baigan pieces both side for 2-3 minutes.turn off the flame.transfer in a plate..

In the same pan add remaining oil heat it then add asafoetida and cumin seeds.saute then add chopped onion fry untill it turn golden brown then add chopped garlic.saute few seconds.add tomato puree and salt.cook 2-3 ke minutes.add red chilli powder, turmeric powder and Coriander powder.mix well cook untill the oil comes. To then add almonds and peanuts paste.mix it and cook for 2 minutes now add kasuri methi and cumin powder.add water to adjust the consistency of gravy.cook for 3-4 minutes..
  3. Now add the brinjal pieces carefully in the gravy.mix lightly add garam masala powder.cover and cooked for 10 minutes on medium flame.turn off the flame.serve with roti or paratha.
