- Prepare Handful of lettuce.
- Provide 1 of tomato.
- Get 1/2 of a red onion.
- Get to drizzle of My Avocado salad dressing.
- You need of Leftover roasted chilli chicken.
- Take of Leftover butternut feta cheese salad (homemade).
- Provide 1 of red sweet pepper.
- Provide 1 handful of pepperdews.
- Use 1 pinch of fresh parsley.
- Get 1 of little bit of salt to season the tomato in the salad.
Instructions to make Eatomess Salad:
- Chopped everything up and put in one bowl. Remember to remove the tomato seeds to prevent the salad from sogging up.
- Shredded the chicken, cut the pepperdews into small chucks and added into the bowl.
- However, the chicken and rice were warmed up together a little bit before adding them into the other ingredients (did it to activate the flavours of the chicken). Once everything was in one bowl, I added the Avocado salad dressing (if it's too thick, u can add a bit of milk to loosen the dressing).
- Topped the rice chicken salad with the butternut feta salad and more black pepper feta cheese.
- Served it with a piece of leftover chicken. I had roasted the whole chicken hence why I had so much leftover.
